Freight delivery: what to expect

  • Your pallet comes on a freight truck with a liftgate. The carrier calls ahead to book a delivery window.
  • The driver lowers the pallet to the ground and moves it by pallet jack to your driveway, garage or the nearest flat, firm spot a pallet jack can reach.
  • A pallet jack needs flat, firm ground (paved driveway, garage floor, patio). It can’t cross grass, gravel, mud, steps or slopes, and the driver can’t bring the wood inside or to another floor.
  • If the truck or the pallet jack can’t reach your spot, the pallet is left at the closest point it can safely reach.
  • The wood arrives stacked and wrapped on the pallet. Please be home for the window you booked: a missed appointment is a re-delivery fee from the carrier.
  • Delivery is charged per order by state: in most states east of the Rockies one pallet is $99 ($179 in some), and delivery is free from two pallets; Florida, Texas, Minnesota, Wyoming and Idaho are $229 for one or two pallets, $299 for three and $399 for four or five. California, Colorado, Washington, Arizona, Utah, Oregon, Alaska and Hawaii aren’t offered at checkout yet: contact us for a quote.

Flavor and burn by wood

Oak

Medium · balanced · versatile

Oak delivers a medium, balanced, and versatile smoky flavor. It is seldom overpowering and often described as having an earthy or slightly nutty undertone. It is considered a clean-burning base wood that enhances the natural flavors of most foods without dominating them.

Best withBeef, lamb, and most other meats.

Long, steady, high heat

Hickory

Strong · bold · savory

Hickory imparts a strong, bold, and savory flavor that is the most traditional "barbecue" taste. It has a distinct and pungent, almost "bacon-like" flavor with a hint of sweetness. Use it in moderation, as too much can result in a bitter taste.

Best withPork (ribs, shoulder, bacon), beef (brisket), and robust game meats.

Hottest, longest burn

Mixed Hardwood

Dense North American hardwoods for a long, hot burn.

Long, hot burn

Cherry

Mild · sweet · fruity

Cherry wood provides a mild, sweet, and fruity flavor profile. Its delicate nature is forgiving for beginners and adds a subtle sweetness and a desirable rosy or mahogany color to the meat's exterior. It does not taste like actual cherries, but rather a subtle, warm sweetness.

Best withPoultry, pork (especially ribs and ham), fish, and vegetables.
